Hi,
Is there an option to disable the Resize Columns button in the Menu Bar for the grid?
Some users have customized the width of some of the columns in the grid, but then when they click by mistake on that button, that custom configuration is gone and they have to do the setup again.

This is not possible I'm afraid. Feel free to create an Idea for it 
Only thing currently possible is disabling the following settings in a User preferences configuration. This will ensure that any changed column widths are not stored as user preference, which results in the user seeing the original column width upon reopening the application:
